Wholesome snack balls with oats, walnuts and chocolate

Late night cravings can throw me into recipe experimentation mode. That was totally the case with little orbs of goodness I came up with the other night.

One of my favorite ways to cook is by experimentation. Partly because I love the creative process, and partly because I'm lazy and don't want to always search for a recipe. I named these quarter balls because most of the ingredients are measured each by a quarter cup. They are wholesome and not too sweet. A couple of these hit's the spot when you need to be tied over for a little bit longer. 

Quarter Balls

1/4 c. whole oats

1/4 c. shredded unsweetened coconut (I chopped my shreds a little smaller) 

1/4 c. chopped walnuts

1/4 c. chopped dark chocolate (I had chips and just rough cut them to break them up smaller)

1 Tbs. coconut oil

2 Tbs. of nut butter

extra chopped coconut for rolling.

Mix all ingredients until blended well. If you would like them to be sweeter, you can add a drizzle of honey to taste. If you find that they are not rolling into balls very easily, refrigerate for an hour. I used a teaspoon to scoop out the mixture for each ball. Roll in coconut and store in the refrigerator.
